"Your Mother Should Know"

This post is about cooking soup from scratch. I have a great cookbook with just soups and I have tasked myself to make a different  recipe twice a month. If I was doing this 25 or more years ago, and if there was a complication in the recipe, I would call my Mom because Your Mother Should Know. Most of my family has worked in the food industry.

Well today would have been my Mom's Birthday. She was born in 1928. She died in 2001. But whenever I cook, my Mom is always in my thoughts. Just like in the photo here, it appears I am asking my Mom where something is and she is pointing it out to me because Your Mother Should Know.

BTW, we were on Mount Royale in Montreal, Quebec, Canada.

The latest recipe I tried was in this great soup cookbook titled The Soup Book 200 Recipes Season to Season. I plan to try many of the recipes and already have done about four.

First the ingredients for the meatballs using only half of the Spanish onion.

The finished meatballs. Suppose to be the size of a walnut. I only buy shelled walnuts so I made a guess at the size. They went into the refrigerator for at least 30 minutes. I assume this is to keep them together better when frying them but I couldn't call my mom to ask.

The ingredients for the soup. It called for a Savoy cabbage but I could only find green cabbage. I also used only half of it. That is the other half of the Spanish onion from the meatballs.

The cabbage and tomato soup simmering. I would say it smelled great but we all know what cabbage smells like. But it was not bad smelling.

Before frying the meatballs, the recipe said to dredge them in flour.

The cooking of the meatballs went fast, and then you place them in the soup to simmer for a while.

And voila, you have soup. The recipe asks to drizzle with Parmesan cheese and Parsley. I am not a big fan of the Parsley so only used the cheese. It was delicious. I have gotten four meals out of the pot. They recommend that if you are freezing it, to separate the meatballs from the soup. Bon appetite!

About Title

"Your Mother Should Know" is a song by the English rock band the Beatles, from their 1967 EP and LP, Magical Mystery Tour. It was written by Paul McCartney and credited to Lennon–McCartney. Titled after a line in the 1961 film A Taste of Honey, its lyrical premise centres on the history of hit songs across generations. McCartney said he wrote it as a plea for generational understanding and respect for a mother's life experience. In the Magical Mystery Tour television film, the song serves as a big production number in the style of a 1930s Hollywood musical. Some commentators view the sequence as cultural satire, as the Beatles are seen dancing and dressed in white evening tails.

If you made it this far in my post, I have included another picture of my mom from the later Florida years of her life, fishing with her dad (Grandpa Shackett) and husband (Harold). I miss them all.
Happy Birthday Mom!
